Folgate Culinary Lavender from Mesa Lavender Farms is one of the best culinary lavenders available for cooking or use in teas, coffees, pastries, and even lemonades.
The best lavenders for culinary use are ‘Folgate, ‘Buena Vista’, ‘Hidcote Pink’, ‘Melissa’, and ‘Royal Velvet’. Mesa Lavender Farms specializes in ‘Folgate’ as our culinary selection.
All of the culinary lavenders listed are cultivars of the Lavandula angustifolia species. These lavender cultivars have low camphor content when compared to the hybrids such as Grosso, Super, Provence, and other lavender hybrids. While some of the hybrids are used for baking, they are not the same quality you will find with Mesa Lavender Farms Folgate Culinary Lavender.
In France lavender is not normally included in their herbes de Provence spice. We include Folgate Culinary Lavender along with other Mediterranean spices in Mesa Lavender Farms Herbes de Provence spice mix. Folgate is also in our salts and teas, Lemon Lavender Pepper, and other spices.
Use an herb grinder, mortar, and pestle, or food processor to grind the buds into a fine powder. This will concentrate the flavor so be sure to be on the conservative side when you use this fine powder. You want to enhance the flavor of what you are preparing. You don’t want to overpower the other ingredients.
